YEMISIR AZIFA A salad of green lentils, chopped onions and jalapeño peppers, seasoned with ginger, garlic, white pepper, lemon, and mustard seed, served cold.
KIK ALICHA A dip of cooked, pureed vegetables, delicately spiced. Mild
KIK WAT Spilt yellow peas, cooked in Ethiopian red pepper sauce.
YATAKILT WAT Fresh green beans, carrots, potatoes, green peppers and onions sauteed with garlic,      ginger and tomatoes.
GOMEN Sauteed collard greens, onions and peppers, spiced with peppercorns and cardamom.
KINCHE Ehiopian-spiced couscous. A meatless dish of crushed golden wheat flavored with seasoned butter.

DORO WAT Chicken in red pepper sauce, marinated in lemon juice, sauteed in butter and seasoned in garlic, onions, fresh ginger and fengreek. Coated with berbere sauce and cooked until tender.
YEBEG ALICHA Tender pieces of lamb braised very slowly in green pepper-laced butter sauce, seasoned with ginger, rosemary and a touch of jalapeño pepper.
GOMEN BE SIGA Sauteed beef, collard greens, onions and peppers, spiced with peppercorns and cardamom. (more greens than beef)
BEREHA TIBS Wilderness broil, charcoal-broiled sliced leg of lamb mixed with breast of lamb marinated in white wine and rosemary with a touch of garlic and black pepper.
DORO TIBS Chicken pieces marinated in honey wine sauce, sauteed in seasoned butter, Awaze sauce, hot peppers and onions.
